Shrimp, Avocado Salad

14 oz. bag Pasta
1- 11/2 lbs. peeled and deveined shrimp
Salt
2-3 avocados

For dressing:
3 celery stalks, chopped
3 green onions, chopped
1/2 cup olive oil
6 T. lemon juice
1 teaspoon salt
1 teaspoon dried thyme
Any hot sauce

In a food processor, blend the celery, green onions, oil, lemon juice, salt and thyme. Season to taste with hot sauce and set aside.

Bring a large pot of salted water to a boil. Cook shrimp for a few minutes until done and remove shrimp from water (approx. 2-3 minutes). Rinse, pat dry and cut into bite size pieces. Add pasta to the same water and cook for approx. 6 minutes, until tender but firm. Drain and rinse pasta in cold water.

Toss pasta, shrimp and dressing. Right before serving, dice avocados and toss gently. Adjust seasoning to taste. Enjoy!
